Farro’s (Spelt) biological name is triticum dicoccum. It is a whole grain emmer wheat, an ancient hulled grain variety that was first domesticated in the Fertile Crescent where it also grows wild. Emmer wheat remains an important crop in Ethiopia and Italy. The fiber rich grain releases starch when it is cooked, yet it remains al-dente which makes it ideal for risotto dishes. Farro has a nutty and slightly sweet taste and a pleasant chewy texture. It can be used in salads, soups and breads. It is sometimes ground into flour for pasta. Farro is easy to cook, very nutritious, high in protein and fibre, 100% organic, has a low glycemic index, and is a delicious alternative to white rice!

Kamut is also an ancient cereal grain related to durum wheat. Its name comes from the ancient hieroglyphic word for wheat. Kamut has a buttery sweet rich flavor and can be appropriate for individuals with a slight wheat intolerance. However it does contain gluten. The kernel is nearly three times the size of a wheat kernel and Kamut, unlike wheat, has not been modified by modern agricultural methods, which contributes to its nutritional value even after grinding and processing. Kamut offers 20-40% more protein and is richer in several vitamins and minerals than wheat. It is a nutrient rich whole grain.

We sell both Farro (Spelt) and Kamut dry pasta. We carry Farro rice and also sell various easy to cook Farro (Spelt) prepared soup mixes.
